St Patrick's Day, March 17th, Irish Stew Recipe
Irish Stew Recipe Serves 4
500g Stewing Lamb (large dice): 500g Potatoes (cut into large pieces): 125g Celery (sliced); 125g Onion (sliced): 125g Leeks (sliced): 125g Onions (large dice): Bouquet garni: Salt/Pepper: chopped parsley: White stock.
Method
1. Blanch, refresh and drain the lamb to remove the scum. Scum will impair the finished appearance of the stew.
2. Place the lamb in a large stew pan with the sliced onions, leek, celery, bouquet garni and barely cover with the white stock.
3. Season and bring to the boil. Simmer for approx. 1 hour.
4. Add the large potatoes and large diced onions, and continue cooking until the meat and vegetables are tender. Carrots can be added optionally.
5. Correct the seasoning and garnish with chopped parsley.
